Baked courgette fries

When it comes to Christmas there are two kinds of people. Those who wear velvet and entertain and those who spend the holidays in pyjamas while eating their weight in sweets.  Are you one of those people who plans lovely Christmas gatherings at home and dresses up? Then we have a lovely, healthy appetizer for you. Are you a pyjama wearer, TV marathon binge watcher? Here you have a delicious snack that will make you eat veggies while leaving more place for chocolate.

You will need (serves 2):
1 large courgette
50 g ground almonds
30 g Parmesan cheese, grated
1/2 tsp oregano
A small pinch of cayenne pepper
1 egg

We found this recipe in this book, that it’s one of our favourite cookbooks ever, as you probably know if you have been following us for a while. Or for two weeks, for that matter. We talk about it all the time and we have prepared almost every single recipe of the book!

Anyway, the steps to get these delicious baked courgette fries are very easy:

1.Preheat the oven to fan 200C

2. Cut your courgettes into French-fry style strips.  Here the books recommends seasoning with salt but since the Parmesan cheese is really salty, we don’t use added salt.

3. Mix the ground almonds, grated Parmesan, oregano and cayenne pepper in a bowl.

4. Beat the egg, dip each courgette strip into the egg and then into the ground almonds, Parmesan cheese and herbs mix.

5. Lay the courgette fries on a baking sheet and bake for 10 minutes. You want just one layer of courgette fries so prepare a second baking sheet if needed.

Don’t let them cool so eat them right away, when they are still crispy. To be honest we are not very fond of courgettes at home, we tolerate them but we don’t love them, so this is a nice way of eating them. And whether you organize fancy soirées at home or you just want to stuff your face with delicious food this Christmas (in pyjamas on the sofa, obviously), you’d love this recipe!
