We love salads all year round but in Summer they are almost mandatory. This recipe combines our favourite fruit, our favourite protein and our favourite nuts with a delicious, zingy lime dressing, which, guess whats? It’s our favourite dressing. In this cloudy, sweltering Summer this salad brings us a little sunshine.
You will need (serves 2):
As much green leaves as you like
A handful of roasted cashews (we roast them ourselves but you can buy them already roasted)
1 chicken breast
1 mango, chopped
1 avocado, chopped
1 red onion, thinly sliced
1 table spoon of minced fresh cilantro
Preheat a grill pan and grill the chicken until browned, about 5 minutes each side. We barely season the chicken because this salad has lots of ingredients and flavours. A litle bit of salt to help cooking would be enough.
In the meantime, combine the greens, mango, avocado, onion, cashews and cilantro in your salad bowl.
Once the chicken is cooked let it cool for a little bit while you prepare the lime dressing. For the dressing you’ll need:
The juice of two limes if you love lime or the juice of one lime if you are cautious.
1 tsp honey
1 tsp chili powder
1/2 tsp ground cumin
1/2 garlic clove, minced
Sea salt to taste
2 tbsp extra virgin olive oil.
Simply whisk all the ingredients in a small bowl until they are completely blended. Taste and adjust the proportions to your liking. We find that this dressing admits a litlte bit more cumin but it depends on your taste buds.
Add the chicken and the lime dressing to your salad and toss until combined (use your hands, it’s the best way to do it). And there you have it: a perfect Summer salad full of nutrients and fresh flavours. We usually have it as a main dish, since it’s quite fulfilling. However, to achieve the perfect Summer menu a little bit of ice cream for pudding is highly recommended.
