Easy banana pancakes

We love a good lazy,slow-paced breakfast and these banana pancakes make a great one. Ridiculously easy to prepare, they are quite fulfilling so better eat them before a nice Sunday walk!Banana_Pancakes_3To get a sweet, fluffly, lovely breakfast for two you will need:
1 egg
1 small ripe banana
40 gr. butter, melted
120 ml milk
Vanilla extract, to taste (half a teaspoon should be fine)
1 tablespoon sugar
A pinch of salt
1,5 teaspoon baking powder
100 gr. flour
A little bit of butter for frying
Powder sugar to decorateBanana_Pancakes_4The process can’t be easier, really: mash the rip banana in a mixing bowl. Crack the egg and mix well. Stir in the melted butter, milk and vanilla extract. Add the sugar, salt, baking powder and flour. Keep mixing until you have a cream-like batter.Banana_Pancakes_1Now melt a knob of butter in a frying pan. On a medium to high heat make the pancakes using about 2 big tablespoons of batter for each pancake. Due to the consistency of the batter, you want them to be small and packed better that thin. Fry until bubbles form on top, then flip over and cook the other side for another minute.
Dust with a little bit of powder sugar and eat as soon as possible with some fresh banana slices and maple syrup. If you feel daring, fry a couple of slices of bacon and enjoy the contrasts of flavours!Banana_Pancakes_2
