Hello! We hope you’ve had a wonderful Easter! We are still on mini vacation and we are trying to make the most of it. Besides, on Friday we head to Berlin for The Hive Conference so this week looks pretty good! And nothing better to start the week than an old school chocolate mousse. Well, this chocolate mousse will actually improve any week, month or year. It’s pure pleasure. Creamy happiness. Airy delight. This is a real show stopper and it’s my dessert of choice if I want to make a good impression. If you follow every step you will find that it’s actually very easy to prepare.
You’ll need:
250 g. good quality dark chocolate (minimum 70% cocoa), roughly chopped. I have prepared this mousse with good quality milk chocolate and it turned out really tasty too, so if dark chocolate is not your cup of tea feel free to use milk chocolate.
125 g. unsalted butter (room temperature)
5 egg yolks
125 g. sugar
5 egg whites
3 dl. cream
Melt the chocolate in a heatproof bowl set over a pan of simmering water (do not allow the base of the bowl to touch the water). Once it’s melted add the butter and mix well.
Whisk the egg yolks with the sugar until they become a white cream.
Beat the egg whites until they form soft peaks. Beat two minutes more than you think it’s enough.
Whip the cream. (Whip it good!!)
Mix carefully all the ingredients in a bowl until all of the egg white has been completely incorporated into the chocolate. Don’t overmix at this stage as you’ll knock out the air bubbles and the mousse will be dense.
Spoon the mousse mixture into four serving glasses. Chill in the fridge for 2-3 hours.

I can eat my weight in this chocolate mousse! It’s simple but the texture and the flavour are impressive. This is my best recipe, if I may say so… I don’t know why I haven’t shared it with you before!!! Let us know if you give it a try, which you definitively should. Guinnness?? Um… Interesting! And when do you add it exactly? At the end when you mix all the ingredients? Cold? Room temperature?
