Torta rustica

This is good old comfort food Italian style. Full of flavours, full of cheese, full of deliciousness. Though best consumed warm, it would be a great Autumn picnic treat. Should we get started?
torta_3You will need:
500 gr. shortcrust pastry (You can prepared it yourself if you are in full baking mode)
A small mozarella (roughly chopped)
A small smoked mozarella (roughly chopped)
100 gr. ham (thinly sliced)
80 gr. sopressa vicentina or salami (roughly chopped)
A splash of milk
2 eggs plus one beaten egg yolk
Oregano, salt and pepper.
torta_7Now, follow these simple easy steps:
1. Preheat the oven to 200 C
2. Brush the insides of a 22cm springform tin with some melted butter.
3. Roll out the pastry on a lightly floured surface until it has the thickness of a coin. Cut two circles the same size: lay the first one on the botton of your tin. Reserve the other for later.
4. Start with a layer of ham. Then add the cheese and the sopressa (or salami).
5. Whisk two eggs with a splash of milk. Add salt and pepper to taste. Pour the egg mixture slowly over the torta.
6. Sprinkle some oregano
7. Lay the remaining circle of shortcrust pastry on top of your torta. Press down the edges and trim.
8. Brush the pastry with the beaten egg yolk.
9. Cook for about 45 minutes.
10. Enjoy!
