Welcome to the last instalment of our Healthy Lunches series. Today we bring you an Italian lunch. These mixed roasted vegetables are delicious on their own, but if you paired them with this beautifully seasoned fish, the result is stunning.
For the roasted vegetables you will need:
1 aubergine
1 courgette
2 peppers
Oregano
Basil
Maldon Salt
Pepper
Preheat your oven to 200º. Chop and slice your vegetables and place them on a baking tray. Sprinkle them with oregano, basil, Maldon Salt, pepper and a glug of olive oil. Roast them in the preheated oven for about 20 minutes. Once they are cooked and cooled down, season the vegetables with half lemon juice and a little bit of olive oil.
For the tuna you will need:
A nice slice of tuna
A little bit of lemon juice
Oregano
1 cloves of garlic (peeled and finely sliced
Olive oil
This is the most easiest dish to prepare. Heat a griddle pan until very (very) hot. Season the tuna with salt and pepper, place it in the pan and cook it for around one to three minutes on each side, depending if you like it rare o well done. In the meantime, mix the lemon juice with the olive oil, the oregano and the garlic. Once the fish is ready, serve it and spoon the sauce over the top.
