Last week we started our “Healthy Lunch” series and today we want to continue with a new delicious recipe that is tasty, low carb and really quick to prepare: cilantro lime cauliflower and roasted salmon.
Start by preheating your oven to 200º. In the meantime, wash the salmon, pat dry with kitchen paper and place your salmon filet on a backing tray. Season it with lemon juice (half lemon would be enough), Maldon salt, pepper and dill. Sprinkle a little bit of extra virgin olive oil and cook it during 20 minutes. That’s all you have to do. Easy right? The salmon would be light, moist and tender with a natural citric flavour.
Now, prepare your caulifower. We love this recipe, although we usually change it a little bit and use red onion and less cilantro. It’s very easy and the result is surprisingly good. Even if you don’t like cauliflower that much, you will love it! Promise!
