Healthy lunch: green beans and marinated chicken breasts

Good morning everyone! New Year resolutions are almost one month older. How is it going? We are trying… Eating healthier is always our number one resolution. That, and going to the gym regularly. We have gone to the gym once. Yeah… Nailed it. Oh, but we are having the healthiest lunches! We are really proud. That’s why we thought we could share them with you!
Yes, you can stop having crappy sandwiches at the office and start enjoying super tasty healthy dishes that you can prepare in aprox. 30 minutes the night before. Let’s start with our first menu: green beans with marinated chicken breasts.

As soon as you get home from woork/gym/shopping put 2 chicken breasts in a bowl, add 3 spoons of balsamic vinegar, 1 spoon of olive oil, two garlic cloves (chopped) and dried thyme to taste. Cover the bowl and put it in the fridge. Go put on your pijamas!
Now, preheat the oven (200º). In the meantime, boil the greeen beans. Ideally, use fresh green beans. But if you don’t have too much time or a nice farmers’ market nearby, use frozen ones. They will be ready in aprox. 10 minutes.

When the oven is ready (hot, hot hot!), take the bowl with the chicken breasts out of the fridge, place all of its content on a tray and cooked it during 25 minutes (180º).


The result will surprise you. The chicken breasts will be moist and incredibly full of flavour. The balsamic vinegar will complement perfectly the plain green beans. We promise you won’t need any dressing!


Voilà! A healthy pretty lunch that you can take to the office or eat at home!
