Good morning! This weekend we enjoyed a little bit of sun and blue skies. It seems that Winter is finally leaving for good. We were so happy that we decided to celebrate with a nice brunch. This is by far our favourite recipe to start the weekend with energy!
You will need:
– 8 large free-range eggs
– 90 ml. cream
– 2 spoons of fresh chopped dill
– 100 g. smoked salmon
– 25 g. butter
– Sea salt
– Freshly ground pepper
(Serves 4)
Whisk the eggs in a bowl. Add the cream and the chopped dill. Mix a little bit. Season to taste. Cut up the salmon and mix it with the eggs and cream.
Now melt the butter in a saucepan. Add the mixture to the saucepan and stir it continuously with something flexible like a spatula or with a wooden spoon. Cook over a moderate heat until little pieces of cooked egg are surrounded by soft, smooth and still quite runny egg. You don’t want to overcook the eggs so be careful!
Serve immediately and enjoy!
