Chickpea curry

After two posts dedicated to resolutions for the new season, we are ready to jump into Autumn like a child jumps into a puddle. And this recipe is perfect for that. It’s ridiculously easy, it’s light but comforting and, well, even its colours scream Autumn. This chickpea curry is going to be our go-to for those days when we want something naughty after a long day in the office followed by a gym session… but we still want our dinner to be good for us. Healthy lunches: lentil soup

Good morning! How was your weekend? We had a great time on Saturday: we went to the farmers market, ate lunch in our favourite place (click, click) and finish the day with a concert. Sunday was for cooking. So let’s get back to our healthy lunches and start the week with good intentions. This recipe is a modified version of the tradicional Spanish lentil soup, which is delicious, but quite strong. We have made it vegan and lighter.
