We’re having quite a nice Summer, with high temperatures and just a few Summer showers. In fact, we are enjoying the best Summer since we moved to Germany. But a couple of weeks ago our Sunday was just like November. Dark, rainy and cold. So I decided that the best way to cope with such a terrible day was trying a new recipe from my new cookbook. There is something so comforting in the scent of freshly baked goods… It improves the most terrible atmosphere. And this rum infused fragant Focaccia was exactly what the doctor ordered.
Even though I love baking I don’t like spending hours in the kitchen and I have to admit I’m scared of lots of recipes because they look so complicated. I just feel I won’t be able to achieve a decent result. If you are a little bit like me you’ll love this cake: it’s incredibly easy to prepare but looks way more complicated that it actually is. Besides, it would be the perfect end to last week’s menu.
This is not a pretty cake. But it tastes sooooo good, so we can say its beauty lies within ;) Paired with a cup of strong coffe it would be perfect for your Monday breakfast. Because of its main ingredients, walnuts and eggs, it’s super nutritious and it will help you to start your week full of energy and joy.
