I remember the first time I tried salted caramel. We were in Bruges, spending a lovely long weekend away. I loved the mixture of the creamy, velvety, sweet fudge and the and the crunchy, strong salt. I was surprised and delighted. Since then it has become my favourite flavour after chocolate, that is. Chocolate is my true love. It will always come first. This recipe, however, combines my two loves: the comfort of dark chocolate and the excitement of salted caramel. It’s a match made in heaven. Autumn is officially baking season and since I’ve been quite obsessed with biscuits lately, yesterday I decided to spent the morning baking some nice classic butter biscuits. There’s nothing better than a sunny cold Sunday morning in the kitchen. Well, maybe a sunny cold Sunday afternoon on your sofa with a blanket, a cup of coffee and some one bite butter biscuits.
Cheesecake was my baking unfinished business. Until last weekend. I have tried a couple of times, but I’ve never achieved what I was looking for. I wanted something creamy but fluffly, sweet but not overly so, something with a fruity or spicy touch. And on top of that, I wanted something easy to prepare. And I’ve found the perfect recipe!
Everything started with a naughty breakfast at Starbucks. One morning I was super hungry and heading to what I knew was going to be a loooong booooring meeting. So I decided I needed a naughty breakfast and treated myself to a Latte Macchiato and a Lemon and poppy seeds muffin on my way to that meeting. I never order muffins, I swear, it was just this time. And when I never order muffins I make sure they are chocolaty ;) But that day I was curious and tried the lemon muffin. And I loooooved it. So I knew I had to try it at home!
