Coconut and vanilla cake

This is my favourite time of the year. Advent in Germany is glorious. The otherwise dark afternoons are now full of twinkling lights, poffertjes scent and happy people drinking Glühwein at the Christmas market. Since we have already watched Love, actually there is only one thing to do until Christmas: bake, bake, bake!

This recipe is our take on a coconut loaf from this book. You see,  I got a cookbook focused on vegetables for my bithday but all I’ve tried so far are a couple of dessert recipes. These amazing salted caramel chocolate brownies, for instance. So me. However, my intentions are good:  we try to eat healthy most of the time… that’s why I’m munching on spicy kale chips while writing this post and we used coconut sugar instead of refined sugar for this recipe.  If only to spread a good amount of Nutella over this delicious cake afterwards, though.

This cake has lots of perks: the ground almonds, spelt flour and coconut sugar make it lighter and easier to digest, the preparation is ridiculously easy and it’s the perfect snack for December weekends when you want something sweet but you can’t stop thinking (and already regretting) about all the sweets that you are going to eat during the holidays.

You will need:

2 eggs
200 ml milk (we used almond milk)
Seeds from 1 vanilla pod (If you had a vanilla pod and your’ve already used the seeds don’t throw it away! A finely chopped vanilla pod will add the same flavour to your desserts as the seeds do. You just need a bigger amount. We learnt this from a wonderful Mexican cook)
150 g spelt flour
200 g coconut sugar
1/2 tsp baking powder
50 g desicated coconut
50 g ground almonds
50 g butter, melted and cooled

As we’ve said before, the preparation is really (but, really) easy:
Preheat the oven to 180º and butter a cake tin.
Whisk together the eggs, milk and vanilla.  Set aside.
Pour the flour, sugar, baking powder, desicated coconut and ground almonds into a bowl. Gradually stir in the egg mixture, add the melted butter and mix vigorously.
Pour the mixture into the loaf tin and bake for 45 minutes.

It tastes amazing on its own but if you spread Nutella on top… No words. Indulge next weekend while you watch your favourite Christmas movie! If you are not in the mood for the holidays yet, try it with your favourite jam on top for breakfast or take a couple of slices with you to the office and make the most of your coffee break.
