Inspired by our trip to Rome, we wanted to share with you this easy recipe of a classic Italian bruschetta. With a few ingredients and a griddle pan you can create a fantastic Italian meal in less than ten minutes. Better than pizza?
You will need:
One slice of bruschetta bread (at least 1cm thick) per person
60 gr tomato sauce. We always prepare our tomato sauce (click for the recipe) but you can buy it in the supermarket
A handful of black olives
A handful of capers
1 large buffalo mozzarella cheese, sliced
1 small bunch fresh basil, leaves picked
Extra virgin olive oil
The steps can’t be easier:
Toast your bread on one side for about two minutes. Then turn it and spread the tomato sauce, add the mozzarella, black olives and capers. Cover and let it cook for two more minutes.
Carefully remove your bruschetta from the pan, drizzle with extra virgin olive oil and add the fragrant basil leaves on top.
And that’s all. We told you it was really easy. However, it’s very important that you use the best quality products you can afford. In these kind of recipes, the ingredients are key!
You can change this recipe as much as you like, using it as a base and adding the toppings of your choice: anchovies, pesto, salami… so many possibilities!

Another good way to prepare bruschetta is to use fresh tomatoes: I usually peel them and chop them coarsely – a good alternative if you don’t have ready-made tomato sauce.
Thank you Silvia! We don’t use fresh tomatoes because we live in Germany and here tomatoes just don’t have any flavour! We prepare a tomato sauce with fresh herbs and garlic so that it tastes better hehe!
