Summer aperitivo

Summer is here! We don’t know for how long, but we are so very happy to welcome high temperatures and sunny days! Last weekend we organized a little aperitivo in our terrace to celebrate, just because. As much as we love chips, we are trying to eat better, so we usually avoid processed snacks and try to create our own. Here you have our three favourite, ridiculously easy recipes to prepare your very own little Summer party. Plus a cocktail, of course.

To make these crispy, spicy, roasted chickpeas you’ll need:
One can of chickpeas
Extra virgin olive oil
Garlic powder
Ground cumin
Cayenne pepper
White pepper
Sea salt
Follow these easy steps: Preheat the oven to 180º. Rinse and drain the chickpeas. Pat the chickpeas dry with paper towels. Put the chickpeas in a bowl, drizzle with olive oil and sprinkle with salt and your spices (We chose pepper, cumin and garlic but you can choose whatever you fancy). Stir with your hands to make sure the chickpeas are evenly coated. Spread the chickpeas out in an even layer on a baking sheet and roast in the oven for about 20 minutes. Stir the chickpeas every now and then while they are in the oven.

In the meantime you can prepare the other two snacks. You’ll need…
For the non greasy fried almonds:
200 gr. whole blanched almonds
Extra virgin olive oil
Sea salt
For the sweet, toasted hazelnuts:
200 gr. hazelnuts
ThymeTo prepare the almonds, pour a little bit of extra virgin olive oil (a tablespoon would be more than enough) in a pan over medium heat. Once its hot but not overly so add the almonds. Stir every now and then and fry them for about 8 minutes or until they are golden. Transfer the almonds to a plate covered in paper towel and pat slightly to get rid of the oil. Sprinkle with salt… and there you have your delicious almonds!
Now, let’s prepare the hazelnuts. Heat a sauté pan, toss the hazelnuts and toast them for about five minutes, stirring occasionally. Then add the thyme and stir for another five minutes. This will flavor the hazelnuts slightly. They will be sweet and rich but also they will have the lovely thyme aroma. Rub the hazelnuts in a kitchen towel to remove loose skins (don’t worry about skins that don’t come off) and serve!

Pour as much Martini as you can handle, add ginger ale, ice, stir… And enjoy! The easiest cocktail ever!
