The combination of coconut and dark chocolate is one of our favourites. It’s quite strong but it’s oh so delicious! We were determined to develop our very own coconut and dark chocolate bars but we couldn’t get them right. I think it has taken more than a year to make this recipe perfect, but finally, here it is: our homemade Bounty bars!
200 g coconut milk (the kind of coconut milk that comes in cans and has a creamy consistency)
150 g desiccated coconut
400 g dark chocolate
3 tablespoons honey
A tablespoon of cold water
A pinch of vanilla
A pinch of salt
Line a square tin with baking paper and pour the dough into the tin. Press it to make it even but not too thin. Set in the fridge for 25 minutes. After that time, the mixture should be hardened but not frozen, so slice it to make your bars. Do not cut them too small, slightly big bars make the next steps easier. Once you have your bars, put them back in the freezer while you melt the chocolate.
So, yes, you’ve guessed it right: it’s time to melt the chocolate. I prefer the Bain-Marie technique but you can do it in the microwave. When the chocolate is melted take off the heat and pour it into a deep bowl. Leave it to cool for about five to ten minutes, stirring every now and then.
Dip the frozen coconut bars into the chocolate. I’ve tried spoons, forks and my own hands, but I’ve found out that forks work better because they allow the chocolate excess to drop off nicely.
After dipping each bar, place it back into the baking paper. Be careful not too place your bars to close to each other or the chocolate will glue them together!
Finally store your bars in a container of your choice in the fridge. Treat yourself before working out or after a hard day at the office. I can assure you that you will prefer these homemade bars to the ones you can buy and are full of preservatives and added sugar!
