Yesterday we spent the afternoon at home, listening to Christmas carrols and baking cookies. That is, we had the perfect Advent Sunday. After the first batch of these amazing soft, gooey cookies the house smellt beautifully, I was reading on the sofa, the two people that I love the most where at home with me, safe, comfortable and without a care in the world. This is an adaptation of different recipes we’ve found over the last years and it definitely has the influence of the traditional German Christmas cookies. They are spicy and buttery and, even though there’s no need to, we added a little bit of white chocolate. You’ll need:
2 & 1/4 cups all purpose flour
3/4 cups butter
1 tsp baking soda
1 tsp ground cinammon
2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 cup sugar
1/2 cup cane sugar
1/4 cup Maple syrup
Optional: 3 tbsp sugar plus white chocolate to tasteThe steps are ridiculously easy: mix all the dry ingredients (flour, baking soda and spices) in a bowl and reserve.
Then, in another bowl, cream together the butter and the two types of sugar. Add the egg and the maple syrup and blend in. Finally add the dry ingredients you’ve mixed before. Mix a little bit more until you have a sticky cream. Cover the bowl and place in the fridge for an hour.Preheat the oven to 175ºC. Now, shape the dough into little balls. If you want you can roll them in the remaining 3 tbsp of sugar. Optional, but totally advisable. Transfer to your baking tray and flatten the little buttery balls just a tiny bit. Bake for 10 minutes. Finally let them cool on a wire rack.While the cookies are cooling, melt your white chocolate in a heatproof bowl suspended over a pan of simmering water (Bain-Marie). Once it’s all melted dip a part or half of each cookie. Remove excess and let them cool again on baking paper. And that’s all! Your house will smell heavenly and the cookies will taste even better! And don’t worry if they don’t look Pinterest perfect!
