We all have our favourite comfort foods and this recipe has reached the top of our list. The mustard gaves a strong punch and the little Brussel sprouts are crunchy and go perfectly well with almost any protein that you choose to eat them with.
And speaking about protein, we are quite the chicken enthusiasts. That’s why we usually choose chicken as our main dish. This time we have adapted a Jamie Oliver’s recipe, making it even easier and a little bit lighter because we didn’t add butter.
Preheat the oven to 200°C 6. Put 1 chicken breast, skin removed, in a bowl. Add sliced onion to the bowl,sprinkle a little bit of thyme (or a lot, if you love it like we do), a good lug of olive oil, a pinch of sea salt and freshly ground black pepper and a small swig of white wine and toss together. Place the flavourings from the bowl into the tray, then wrap the chicken breast in 2 slices of pancetta/thin bacon slices. Drizzle with olive oil and cook in the middle of the oven for 25 to 35 minutes.
