Guacamole

Short post to start the week with lots of healthy energy! This weekend we tried to ignore Winter and the fact that on March 17th it was still snowing like crazy, and decided to prepare the most summery dish that we could think of. Guacamole!
It’s super easy: chop three avocados, two peeled tomatoes, half an onion, a small chili pepper, a little bit of chive and a little bit of parsley. Blend everything together and add a pinch of sea salt (preferably Maldon), three table spoons of lemon juice and a splash of olive oil… and enjoy!
