Fake lasagna

This is a great recipe for those who love comfort food and skinny jeans. Fake lasagna! It has no pasta, so no carbs added! But I promise you it has all the flavour!! It’s super easy and you will be out of the kitchen in less than an hour so what’s not to love?

You just need:
250 gr. veal mince meat
A big aubergine
150 gr. chopped onion
Olive oil
A pinch of salt
300 gr. crushed tomato
A little bit of parmesan chesse
Serves two.

Heat the olive oil in a large pan and cook the chopped onion on a medium to low heat until the onion has softened. Now add the veal mince meat and the pinch of salt. When the meat is brown-ish, add the crushed tomato and simmer for about ten minutes.

In the meantime, slice the aubergines and ligly grease a deep baking pan. Once the sauce is done, it’s time to assemble our fake lasagna. Place a layer of aubergine slices on the botton of the pan, pour a little bit of the meat sauce, then another layer of aubergine and so on… Aubergine, meat, aubergine, meat… But be sure you finish with an aubergine layer. Finally sprinkle the grated parmesan cheese on top.

Bake in a 200ΒΊ preheated oven for about 25 minutes and turn the grill on for the last 5 minutes. Serve in your brand new dinner service… and enjoy!!!
